Chocolates: From Sacred Food to Sweet Treat

Before they became people’s favorite dessert, chocolates were a sacred food of the people of ancient Mesoamerica. Monkeys first discovered the cacao plant and ate its sweet pulp. The people soon learned the cacao plant was edible and tasted the sweet pulp concealed within the pod.

The Olmecs discovered the beans from the cacao plant had health benefits and included them in their diet. They called these beans kakawa or cacao. The beans were roasted in the fire, giving off a chocolate-like aroma, whereas the pulp was fermented into cacao chica, a native concoction. The Mayans used the cacao in their ceremonies, offered them as gifts, and wove mythical tales about them. Their paintings revealed the sacredness of cacao—the Mayan gods fought over beans, and kings were served cacao creations. The Toltecs also saw the cacao as a sacred food. They believed the god Quetzalcoatl gave the bean to men as a gift and taught them how to cultivate it. The Aztecs saw the cacao as a status symbol, for it was served only for the rich and noble.

In 1519, Hernan Cortes, who conquered the Aztecs, discovered a chocolate ritual where 50 cups were brimming with beans in storehouses a day and saw that cacao was used as currency. After the Aztecs were conquered, the Spanish adapted the culture of the Aztecs and began to drink hot chocolate. In the 17th century, the Spanish princess Maria Theresa brought the cacao beans to the French court where she married King Louis XIV, and chocolate became a delightful treat in European society.

In the 18th century, cacao was not just served as a hot chocolate drink. The Italians introduced the first chocolate bars. Chocolate was incorporated in recipes for main dishes and desserts. It was used as dip, mixed with other ingredients, and it was even made into soup with milk, cinnamon, and egg yolk. Nowadays, chocolates come in the form of
edible arrangements
or bouquets with chocolate dipped strawberries which are given as gifts for special occasions.

All kinds of chocolates were made in the 20th and 21st century: nougats, chocolate-covered peanut butter, and chocolates embedded with nuts. Chocolates are even adorned as delicious
edible arrangements
for weddings, birthday celebrations, anniversaries, and other special occasions.
